This Lady’s Full of Flavour

All our moms and selves included are blessed with certain friends who are more than friends. They are friends who are like sisters, soul mates and probably more.

My mommy has a handful of those but the one I want to talk about today is Aunty B – oh, she is such a cooking genius that  anything she makes is always ‘awesomely’ delicious.

I love her more so coz every time I’m home at my parents’, she will spoil me with some of her creations ;D

This recipe of her’s, I call it Aunty B’s Bhindi Bahji with Sauf (:O),  is one I often make - it is super easy and quick to put together and super super yummy. Lots of super there – this deserves it – it’s so super :)

Ingredients: (Serves 4-6)

250gms bhindi/ okra/ lady finger, washed and cut length wise
1 medium eggplant and 1 medium boiled potato, cut length wise
4 tomatoes
4-5 curry leaves
1/4 teaspoon Asafoetida (hing)
1 teaspoon fennel seeds (sauf) Tip: don’t miss out on this at any cost, this is the hidden secret of this recipe ;D
3-4 tablespoons of oil
Dry masalas (coriander and turmeric powder) and salt as per taste

Directions:

  1. Add about 2 tablespoons oil in a flat pan and add the bhindis to it to stir fry until they are 50-60% cooked (takes approx 3-4 minutes). Remove on a tissue to absorb the excess oil
  2. In the same pan, stiry fry the eggplant and keep aside (again takes  about 3-4 minutes)
  3. In another deep pan, add about 1 tablespoon oil and when it starts to heat, add the asafoetida followed by fennel seeds, curry leaves, tomatoes, salt and dry masalas. Cook this for about 5-7 minutes
  4. Add the stir fried bhindi, eggplant and potatoes and simmer for a few minutes until all flavours come together nicely
  5. Serve hot with rice or rotis and thank Aunty B as you savour and relish every bite :)

This lady is indeed full of flavors... and am loving this bhaji.. it is loaded with all my favorite vegetables...
